
You’ve enjoyed these delicious flavors of Chinese salad at your favorite restaurants. Now you can re-create the taste experience at home — at less cost and in just minutes. Save time by purchasing pre-chopped salad ingredients and roasted chicken.
Dressing:
1/2 cup peanut oil (or oil of your choice)
1/3 cup rice vinegar
1 packet Jaden Chinese Salad Dressing and Seasoning Mix
Salad:
4 cups chopped romaine lettuce
1 cup cole slaw mix (shredded green cabbage, red cabbage and carrots)
1 cup broccoli cole slaw
1 cup diced cooked chicken
1/2 cup chopped celery
1/2 cup peeled and chopped cucumber
1/4 cup chopped green onions
Optional extras:
Chopped peanuts
Slivered almonds
Fried won tons
Chow mein noodles
Mandarin oranges
Place dressing ingredients in blender container; cover and blend until smooth. (Or place in cruet or small jar, cover and shake until blended). Place lettuce, cole slaw mix, chicken, celery, cucumber and onion in a medium salad bowl. Pour dressing over salad and toss well. Add any combination of “optional extras” as you like.
Makes 6 servings.
